A quick and refreshing summer side salad combining sweet watermelon, tangy feta, fresh mint, and a rich balsamic glaze. Perfect for BBQs, picnics, or light lunches.

  • 4 cups watermelon, cubed (seedless or seeds removed)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil (optional)
  • Pinch of freshly ground black pepper
  • Sea salt to taste

Instructions

  1. Cut 4 cups of fresh watermelon into bite-sized cubes (about 1-inch pieces) using a sharp knife.
  2. Measure 1 cup of feta cheese and crumble it gently with your fingers or a fork.
  3. Rinse 1/4 cup fresh mint leaves and roughly chop them.
  4. In a large mixing bowl, combine the watermelon cubes, crumbled feta, and chopped mint. Toss gently to mix without bruising the watermelon.
  5. Drizzle 2 tablespoons balsamic glaze and 1 tablespoon extra virgin olive oil over the salad. Add a pinch of sea salt and freshly ground black pepper to taste. Toss gently again to coat.
  6. Taste and adjust seasoning if needed.
  7. Serve immediately or chill for 10-15 minutes to let flavors meld. Keep covered if refrigerating.

Notes

Use a sharp knife to cut watermelon to avoid crushing. Toss gently to keep watermelon cubes intact. Chop mint just before serving for best flavor. If making balsamic glaze at home, simmer balsamic vinegar until syrupy (about 10-12 minutes). Serve chilled or at cool room temperature. Store leftovers in an airtight container in the refrigerator for up to 24 hours and drain excess liquid before serving again.
