These freezer-friendly breakfast burritos are packed with savory sausage, crispy hash browns, fluffy eggs, and melted cheese. Perfect for busy mornings, they reheat in under two minutes and stay delicious for up to three months.

Ingredients

Scale
  • 1 pound breakfast sausage (Jimmy Dean or Applegate recommended; turkey sausage for lighter option)
  • 2 cups frozen shredded hash browns (no added seasonings)
  • 8 large eggs
  • 1/4 cup milk (2% or unsweetened almond milk)
  • 1 1/2 cups shredded cheddar cheese (sharp cheddar preferred)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)
  • 2 tablespoons butter or oil for cooking
  • 6–8 large flour tortillas (burrito size, about 10 inches)
  • Optional add-ins: diced bell peppers, chopped green onions, black beans, or sautéed mushrooms

Instructions

  1. Cook the sausage. Heat your skillet over medium-high heat. Add the sausage and break it up with your spatula as it cooks. Cook until nicely browned, about 5-7 minutes. Use a slotted spoon to transfer to a plate lined with paper towels. Leave about 1 tablespoon of drippings in the pan.
  2. Crisp the hash browns. Add the frozen hash browns to the same skillet over medium-high heat. Spread into an even layer and cook without moving for 3-4 minutes. Flip and cook another 3-4 minutes until golden and crispy. Season with a pinch of salt and pepper. Transfer to a separate plate to cool slightly.
  3. Scramble the eggs. In a medium bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and smoked paprika until well combined. Reduce heat to medium-low and add butter to the skillet. Pour in the egg mixture and let it set for about 30 seconds before gently pushing the cooked edges toward the center. Keep stirring gently until soft and fluffy, about 2-3 minutes. Remove from heat immediately.
  4. Cool the filling. Spread the cooked sausage, hash browns, and scrambled eggs onto a baking sheet in separate piles. Let cool for about 10-15 minutes. This step is crucial to prevent soggy tortillas.
  5. Assemble the burritos. Lay a tortilla flat on your work surface. Sprinkle about 2-3 tablespoons of cheese down the center, leaving about 2 inches at the top and bottom. Add about 1/4 cup of the cooled sausage, a generous handful of hash browns, and about 1/4 cup of scrambled eggs. Do not overstuff.
  6. Wrap them tight. Fold the sides of the tortilla toward the center, then fold the bottom flap up and over the filling. Roll tightly away from you, tucking the filling in as you go. Place seam-side down on a piece of aluminum foil. Wrap the foil tightly around the burrito, making sure it is fully enclosed. Repeat with remaining tortillas and filling.
  7. Freeze. Place the wrapped burritos in a single layer on a baking sheet and freeze for about 2 hours, or until solid. Then transfer to a freezer-safe zip-top bag. Label with the date and contents.

Notes

Don’t skip the cooling step to avoid soggy tortillas. Pat hash browns dry if oily. Toast tortillas briefly for better pliability. Label everything with date and contents. For reheating, unwrap foil, wrap in damp paper towel, microwave 1 minute, flip, then 30-60 seconds more. Alternatively, reheat in 350°F oven for 15 minutes for a crispy tortilla.
