  • 1 cup (245g) pumpkin puree (100% pure, not pie filling)
  • 1/2 cup (120g) Greek yogurt (full-fat or 2%)
  • 1/3 cup (80ml) honey or maple syrup
  • 1 large egg (room temperature)
  • 3 tablespoons (42g) coconut oil or unsalted butter (melted and slightly cooled)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips, chopped walnuts, or dried cranberries (optional)

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC). Line a 12-cup muffin tin with paper liners or lightly grease the cups with cooking spray.
  2. Make the oat flour: Place 1/2 cup of the rolled oats in a food processor or blender. Blitz for about 20-30 seconds until you have a fine, flour-like powder. The remaining 1/2 cup of whole oats will go into the batter later for texture.
  3. Mix the dry ingredients: In a medium bowl, whisk together the oat flour, whole wheat pastry flour, the remaining 1/2 cup of whole oats, baking soda, baking powder, pumpkin pie spice, and salt. Whisk for about 15 seconds to aerate the flour and distribute the leavening agents evenly.
  4. Mix the wet ingredients: In a large bowl, whisk together the pumpkin puree, Greek yogurt, honey (or maple syrup), egg, melted coconut oil (or butter), and vanilla extract. Whisk until smooth and fully combined. It should look like a thick, creamy orange batter.
  5. Combine wet and dry: Pour the dry ingredients into the wet ingredients. Use a spatula to fold them together gently. Stir just until you no longer see streaks of flourโ€”about 10 to 12 folds. A few lumps are totally fine. Overmixing will make the muffins tough and dense.
