  • 1 cup dried elderberries
  • 4 cups filtered water
  • 1 cup raw honey
  • 1-inch piece fresh ginger, sliced
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • Optional: peel from 1 organic orange

Instructions

  1. In a medium pot, combine the dried elderberries, water, sliced ginger, cinnamon sticks, whole cloves, and orange peel (if using).
  2. Bring to a boil over high heat, then reduce heat to low, cover with lid slightly ajar, and simmer gently for 30-40 minutes until liquid reduces by about half.
  3. After simmering, gently mash the berries against the side of the pot with a wooden spoon to release more beneficial compounds.
  4. Place a fine-mesh strainer over a large bowl or glass measuring cup and carefully pour the hot mixture through. Let it drain for a few minutes without pressing on the solids.
  5. Let the strained liquid cool for 10-15 minutes until warm (about 110-120°F).
  6. Stir in the raw honey until completely dissolved.
  7. Using a funnel, pour the warm syrup into a clean glass jar or bottle, leaving about 1/2 inch headspace.
  8. Let cool completely to room temperature before sealing and refrigerating.

Notes

Do not add honey to boiling liquid as it destroys beneficial enzymes. For a thicker syrup, simmer an extra 10 minutes before straining. Store in refrigerator for 2-3 months. Can be frozen in ice cube trays for longer storage.
