Ingredients

Scale
  • 2 cups water (filtered if possible)
  • 4 black tea bags (English Breakfast or Assam; avoid Earl Grey)
  • 1/2 cup pumpkin puree (100% pure, not pumpkin pie filling)
  • 1/3 cup brown sugar (packed; light or dark)
  • 2 tablespoons maple syrup (real maple syrup)
  • 1 teaspoon vanilla extract (pure)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg (freshly grated if possible)
  • Pinch of black pepper
  • For serving (per cup): 1/2 cup concentrate, 1/2 cup milk of choice (whole milk, oat milk, or almond milk), optional toppings: whipped cream, cinnamon sprinkle, or caramel drizzle

Instructions

  1. Combine water and pumpkin puree: In a medium saucepan, whisk together the water and pumpkin puree until smooth. Turn heat to medium-high and bring to a gentle simmer, stirring occasionally.
  2. Add the spices and sweeteners: Once simmering, add cinnamon, ginger, cardamom, cloves, nutmeg, and black pepper. Whisk in brown sugar and maple syrup until dissolved.
  3. Steep the tea: Remove saucepan from heat. Add black tea bags, fully submerged. Let steep for exactly 5 minutes. Set a timer.
  4. Strain the concentrate: After 5 minutes, remove tea bags and gently squeeze over pot. Place fine-mesh strainer over a heat-safe bowl or storage jar. Pour concentrate through strainer to catch pumpkin fibers or spice clumps. Use back of spoon to press liquid through if needed.
  5. Add vanilla and cool: Stir in vanilla extract. Let cool at room temperature for about 10 minutes, then transfer to jar.
  6. Refrigerate: Seal jar and refrigerate for at least 2 hours before using. Flavors continue to meld as it chills. Concentrate keeps for up to 2 weeks in the fridge.
  7. To make a latte: Pour 1/2 cup concentrate into a mug. Heat 1/2 cup milk until steaming. Pour milk into mug and stir. Top with whipped cream and cinnamon if desired.

Notes

Don’t boil the tea bags—add them after removing from heat to avoid bitterness. Whisk pumpkin thoroughly to prevent clumps. Adjust sweetness to taste: reduce brown sugar to 1/4 cup and skip maple syrup for less sweet, or increase to 1/2 cup for sweeter. Recipe doubles well; concentrate freezes for up to 3 months. Flavor improves after a day or two in the fridge.
