  • 1.5 lbs beef chuck roast, cut into 1-inch cubes
  • 1 lb bone-in pork shoulder, trimmed and cubed
  • 1 lb boneless, skinless chicken thighs, chopped
  • 1 large onion, diced
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 2 medium green tomatoes, chopped (or regular tomatoes as substitute)
  • 2 medium potatoes, peeled and cubed
  • 1 cup okra, sliced (optional)
  • 4 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and freshly ground black pepper to taste
  • ¼ tsp crushed red pepper flakes (optional)
  • 3 tbsp all-purpose flour (or cornstarch for gluten-free)
  • ¼ cup cold water

Instructions

  1. Trim excess fat from beef chuck and pork shoulder, cut into 1-inch cubes. Chop chicken thighs into bite-sized pieces. Pat all meats dry.
  2. Optional: Brown beef and pork cubes in batches in a tablespoon of oil over medium-high heat for 2-3 minutes per side, then transfer to slow cooker.
  3. Dice onion, slice carrots, chop celery, green tomatoes, and potatoes. Slice okra if using. Place vegetables on top of meats in slow cooker.
  4. Pour beef broth over meat and vegetables. Stir in Worcestershire sauce, apple cider vinegar, smoked paprika, dried thyme, salt, pepper, bay leaves, and red pepper flakes if using.
  5. Cover and cook on LOW for 8-9 hours or on HIGH for 4-5 hours.
  6. About 30 minutes before end of cooking, mix flour with cold water to form slurry. Stir into stew to thicken. Add broth or water if too thick.
  7. Remove bay leaves. Taste and adjust seasoning with salt and pepper as needed.
  8. Serve warm, optionally with crusty bread or creamy mashed potatoes.

Notes

Browning the meats before slow cooking is optional but adds richer flavor. Use cornstarch instead of flour for gluten-free option. If stew is too watery at the end, cook uncovered on HIGH for 15-20 minutes to reduce liquid. Keep lid closed during cooking to maintain heat and cooking time. Adjust seasoning at the end.
