Light Apple Cider Mimosas with Easy Cinnamon Rim

A crisp, refreshing fall cocktail combining tart apple cider with dry sparkling wine, finished with a warm cinnamon sugar rim. Perfect for brunch or any autumn gathering.

  • 1 cup (240 ml) apple cider, chilled
  • 2 cups (480 ml) champagne or brut sparkling wine, chilled
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon (2.5 g) ground cinnamon
  • Apple slice or lemon wedge, for moistening the rim
  • Optional garnish: thin apple slices, cinnamon sticks, or fresh rosemary sprigs

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Mix until evenly distributed.
  2. Run an apple slice or lemon wedge around the rim of each chilled glass to moisten it lightly.
  3. Dip the moistened rim into the cinnamon sugar mixture, rotating to coat evenly. Tap off excess.
  4. Pour 1/4 cup (60 ml) chilled apple cider into each prepared glass.
  5. Slowly pour 1/2 cup (120 ml) chilled sparkling wine into each glass, pouring at an angle to preserve bubbles.
  6. Garnish with optional apple slices, cinnamon sticks, or rosemary sprigs. Serve immediately.

Notes

Chill all ingredients for at least 2 hours before serving. For a non-alcoholic version, use sparkling apple cider or sparkling water. For a spiced version, add 1 tablespoon bourbon per glass. The rim is key—use a light hand when moistening to avoid sogginess.
