Light Spider Web Buffalo Chicken Dip: Easy & Healthier Recipe

  • 8 oz light cream cheese, softened
  • 1 cup plain Greek yogurt (full-fat or 2%)

  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh chives or green onions for garnish
  • 1 tablespoon buffalo sauce (for spider web design)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC).
  2. If using rotisserie chicken, remove skin and shred meat with two forks into small, bite-sized pieces. You should have about 2 cups.
  3. Soften cream cheese by letting it sit at room temperature for 20-30 minutes, or microwave in 10-second bursts until soft but not melted.
  4. In a mixing bowl, combine softened cream cheese and Greek yogurt. Use a hand mixer on medium speed until completely smooth, about 1 minute. Scrape down sides halfway through.
  5. Add buffalo wing sauce, garlic powder, onion powder, and smoked paprika. Mix until evenly combined and uniform pale orange in color. Taste and adjust heat if desired.
  6. Fold in shredded chicken, 3/4 cup cheddar cheese, all mozzarella, and crumbled blue cheese (if using) with a spatula until evenly distributed. Do not overmix.
  7. Spread mixture evenly into a greased 9-inch pie dish or small baking dish. Smooth the top with a spatula.
  8. In a small bowl, mix remaining 1/4 cup cheddar with 1 tablespoon buffalo sauce to form a thick paste. Spoon into a zip-top bag, snip off a tiny corner (about 1/8 inch), and pipe concentric circles on top of the dip, starting from center and working outward, spaced about 1 inch apart.
  9. Using a toothpick or knife, drag from center outward through all circles every inch or so to create spider web lines.
  10. Bake for 18-22 minutes, until hot and bubbly around edges. Center should be warm and spider web slightly browned and set. Do not overbake.
  11. Let dip rest for 5 minutes after baking. Sprinkle with fresh chives or green onions before serving.

Notes

Don’t skip softening the cream cheese to avoid lumps. Watch baking time carefully as Greek yogurt can separate if overbaked. Taste the base before baking to adjust heat and salt. For the spider web design, make the cheese-buffalo mixture thick like a paste for clean lines. The dip tastes even better the next day after flavors meld overnight.
