These Lighter Buffalo Chicken Dip Pull-Apart Sliders are a quick and easy weeknight dinner or game day favorite, made with a creamy, spicy buffalo chicken filling on soft rolls. They’re lighter than traditional sliders but just as indulgent, using Greek yogurt and neufchâtel cheese for a healthier twist.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie or leftover grilled chicken)
  • 4 oz neufchâtel cheese, softened
  • 1/2 cup plain Greek yogurt (full-fat or 2%)
  • 1/3 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh chives or green onions (for garnish)
  • 12 slider rolls (e.g., Martin’s potato rolls or light whole wheat slider buns)
  • 1 tablespoon melted butter (or light butter spread)
  • 1/2 teaspoon garlic powder (for brushing)
  • 1/4 teaspoon paprika

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray or brush with oil.
  2. Make the buffalo chicken filling: In a medium mixing bowl, combine the softened neufchâtel cheese and Greek yogurt. Stir until smooth and well combined. Add the buffalo hot sauce, garlic powder, onion powder, and a pinch of salt and pepper. Stir again. Fold in the shredded chicken, shredded cheddar, and crumbled blue cheese (if using). Mix until everything is evenly coated. The mixture should be creamy and thick.
  3. Prepare the slider rolls: Using a sharp knife, carefully slice the entire pack of slider rolls in half horizontally, keeping them connected. Place the bottom half of the rolls in the prepared baking dish, cut side up.
  4. Spread the filling: Spoon the buffalo chicken filling evenly over the bottom layer of rolls, spreading it to the edges.
  5. Top with the remaining rolls: Place the top halves of the rolls over the filling, cut side down. Press down gently.
  6. Brush the tops: In a small bowl, mix the melted butter with 1/2 teaspoon garlic powder and 1/4 teaspoon paprika. Brush this mixture generously over the tops of the rolls.
  7. Bake covered: Cover the dish with aluminum foil and bake for 15 minutes.
  8. Bake uncovered: Remove the foil and bake for another 5-7 minutes, until the tops are golden brown and the edges are bubbly.
  9. Rest and serve: Let the sliders rest in the dish for 5 minutes before cutting. Sprinkle with chopped chives or green onions before serving.

Notes

For a dairy-free version, use plant-based cream cheese and dairy-free yogurt. For extra spice, add chopped pickled jalapeños or use a hotter hot sauce. The filling can be made up to 2 days ahead and stored in the fridge. Let it sit at room temperature for 15 minutes before spreading.
