A lighter Buffalo chicken dip that doesn’t taste like a compromise. It has all the spicy, cheesy, creamy goodness you expect from the classic party staple, but uses simple swaps that actually make it better.

Ingredients

Scale
  • 2 cups cooked chicken breast, shredded or diced (rotisserie chicken works great)
  • 1 cup full-fat Greek yogurt (e.g., Fage or Chobani)
  • 8 ounces Neufchâtel cream cheese, softened
  • 1/2 cup hot sauce (e.g., Frank’s RedHot)
  • 1 cup shredded mozzarella cheese (low-moisture, part-skim)
  • 1/2 cup shredded cheddar cheese (sharp cheddar)
  • 1/2 cup blue cheese crumbles (for topping)
  • 1 tablespoon ranch seasoning mix (optional)
  • 3–4 green onions, sliced (for garnish)
  • Celery sticks, for serving
  • Carrot sticks, for serving
  • Crackers or tortilla chips, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease your baking dish with cooking spray or a thin layer of olive oil.
  2. Soften the cream cheese: Take the Neufchâtel cream cheese out of the fridge about 20 minutes before you start, or microwave it for 10-15 seconds until soft but not melted.
  3. Mix the creamy base: In a medium mixing bowl, combine the softened cream cheese and Greek yogurt. Stir with a spatula until completely smooth and well combined, about 1 minute.
  4. Add the hot sauce and seasoning: Pour in the hot sauce and ranch seasoning mix (if using). Stir until evenly incorporated.
  5. Fold in the chicken and cheese: Add the shredded chicken, mozzarella, and cheddar cheese. Fold gently until the chicken is evenly coated and the cheese is distributed throughout.
  6. Transfer to the baking dish: Spoon the mixture into the prepared dish and spread into an even layer. Smooth the top with the back of a spatula.
  7. Top with blue cheese crumbles: Sprinkle the blue cheese crumbles evenly over the top. Do not press them in.
  8. Bake for 15-20 minutes until hot and bubbly around the edges. The top should be lightly golden. For a browner top, broil for the last 1-2 minutes, watching carefully.
  9. Let it rest for 10 minutes at room temperature before serving. This allows the flavors to meld and the dip to set.
  10. Garnish with sliced green onions. Serve warm with celery sticks, carrot sticks, crackers, or tortilla chips.

Notes

For the chicken, use rotisserie chicken for convenience. Full-fat Greek yogurt is essential for thickness. Frank’s RedHot is the recommended hot sauce. Let the dip rest for 10 minutes after baking for best texture. Can be assembled ahead (minus blue cheese) and refrigerated for up to 24 hours; add 5 minutes to baking time if starting from cold.
