  • 1/2 cup (115g) unsalted butter
  • 3 ripe bananas, mashed
  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/2 cup (120ml) buttermilk or plain yogurt
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Brown the Butter (about 5–7 minutes): In a medium saucepan over medium heat, melt the unsalted butter. Stir frequently as it foams and begins to turn golden brown. Once browned, immediately remove from heat and transfer to a heatproof bowl to cool slightly.
  2. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until mostly smooth with some small lumps.
  4. Add the cooled brown butter, granulated sugar, brown sugar, eggs, and vanilla extract to the mashed bananas. Whisk or beat by hand until combined and smooth.
  5. In a separate bowl, sift together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture in three parts, alternating with the buttermilk or yogurt (start and end with dry). Gently fold with a spatula after each addition. Avoid overmixing.
  7. Fold in the chocolate chips gently, reserving a handful for topping if desired.
  8. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle reserved chocolate chips evenly over the top.
  9. Bake for 55–65 minutes, starting to check at 50 minutes by inserting a toothpick in the center. It is done when the toothpick comes out with a few moist crumbs but no raw batter.
  10. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Watch the butter carefully when browning to avoid burning. Coat chocolate chips lightly with flour before folding to prevent sinking. Tent the bread with foil if the top browns too quickly. Slightly underbaking helps keep the bread moist.
