  • 3 medium ripe bananas, mashed
  • 1 ¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (about 150g) Nutella
  • Optional: ½ cup chopped walnuts or hazelnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a large bowl, combine the melted butter and sugar. Beat with a hand mixer or whisk until smooth and slightly fluffy, about 2 minutes.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until the batter is smooth and glossy.
  5. Fold in the mashed bananas gently until just combined.
  6. Add the flour mixture to the wet ingredients in two batches, folding gently with a spatula after each addition. Do not overmix.
  7. Warm the Nutella slightly in the microwave for about 15 seconds to soften. Drop spoonfuls of Nutella over the batter in the pan, then use a knife or skewer to create swirls by dragging it through the batter.
  8. Bake for 55-60 minutes, starting to check at 50 minutes with a toothpick. It should come out with a few moist crumbs but no raw batter. Tent with foil if the top browns too quickly.
  9. Remove from oven and cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

Use ripe bananas for best sweetness and moisture. Warm Nutella slightly before swirling to prevent sinking. Avoid overmixing the batter to keep the bread tender. Tent with foil if the top browns too quickly. Let bread cool completely before slicing to avoid crumbling. For dairy-free, swap butter with coconut oil and eggs with flax eggs. Gluten-free flour can be used but may alter texture.
