  • 2 tablespoons (25g) brown sugar

  • 1 ยฝ teaspoons (9g) salt
  • ยฝ cup (120g) baking soda
  • Coarse sea salt, for sprinkling
  • 1 egg beaten with 1 tablespoon water (egg wash)
  • 8 ounces (226g) sharp cheddar cheese, freshly shredded
  • ยพ cup (177ml) beer (lager or pale ale)
  • 4 ounces (113g) cream cheese, softened
  • 1 tablespoon Dijon mustard
  • ยฝ teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. Activate the yeast: In your mixing bowl, combine the warm water (110ยฐF) and brown sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until it gets foamy.
  2. Make the dough: Add the melted butter, salt, and 2 cups of flour to the yeast mixture. Mix on low speed with the dough hook until combined, then gradually add the remaining 2 cups of flour. The dough should be soft and slightly sticky.
  3. Knead: Knead on medium speed for about 5-6 minutes (or 8-10 minutes by hand) until the dough is smooth and elastic.
  4. First rise: Form the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel and let it rise in a warm spot for about 45 minutes, or until doubled in size.
  5. Shape the bites: Punch the dough down and turn it out onto a lightly floured surface. Divide it into 4 equal pieces. Roll each piece into a long rope, about 1 inch thick. Cut the rope into 1-inch pieces. You should get about 40-50 bites total.
  6. Prepare the baking soda bath: Bring a large pot of water (about 8 cups) to a boil. Carefully add the baking soda. Reduce the heat to a gentle simmer.
  7. Boil the bites: Drop the pretzel bites into the simmering water in batches, about 8-10 at a time. Let them boil for 30 seconds, then flip them and boil for another 30 seconds. Remove them to a parchment-lined baking sheet.
  8. Egg wash and salt: Brush each pretzel bite with the egg wash, then sprinkle generously with coarse sea salt.
  9. Bake: Preheat your oven to 425ยฐF (220ยฐC). Bake the pretzel bites for 12-15 minutes, until deep golden brown. Rotate the pan halfway through.
  10. Butter bath: As soon as they come out of the oven, brush them with melted butter. Let them cool for 5 minutes on the pan.
  11. Make the beer cheese dip: In a small saucepan over medium-low heat, warm the beer until steaming. Add the cream cheese and whisk until smooth. Gradually add the shredded cheddar cheese, whisking constantly until melted and smooth. Stir in the Dijon mustard, garlic powder, Worcestershire sauce, and a pinch of salt and pepper. Keep warm over low heat.
  12. Serve: Transfer the pretzel bites to a serving platter with the warm beer cheese dip on the side. Serve immediately.
