This homemade copycat Starbucks Iced Sugar Cookie Almondmilk Latte is richer, more customizable, and way more satisfying than the original. Made with a simple homemade sugar cookie syrup, it comes together in under 10 minutes and is perfect for hosting or late-night cravings.

Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup water
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • Pinch of salt
  • 2 shots (about 2 ounces) espresso or 1/2 cup strongly brewed coffee
  • 1 cup unsweetened almond milk
  • Ice cubes
  • 1–2 tablespoons sugar cookie syrup (optional, to taste)
  • Crushed sugar cookies or shortbread cookies (for garnish, optional)
  • Whipped cream (for garnish, optional)
  • Sprinkles (for garnish, optional)

Instructions

  1. Make the sugar cookie syrup: In a small saucepan, combine 1 cup granulated sugar and 1 cup water. Place over medium heat and stir occasionally until the sugar is completely dissolved, about 3-4 minutes. Do not boil. Remove from heat and stir in 2 teaspoons vanilla extract, 1/2 teaspoon almond extract, and a pinch of salt. Let cool completely.
  2. Brew your coffee or espresso: While the syrup is cooling, brew 2 shots of espresso or 1/2 cup of very strong coffee. Let the coffee cool slightly.
  3. Fill your glasses with ice: Fill tall glasses to the top with ice.
  4. Add the syrup: Pour 1 to 2 tablespoons of the sugar cookie syrup over the ice.
  5. Pour in the almond milk: Slowly pour 1 cup of unsweetened almond milk over the ice and syrup. Stir briefly.
  6. Add the coffee: Gently pour the brewed coffee or espresso over the almond milk. For layered stripes, pour slowly over the back of a spoon.
  7. Stir and taste: Stir well and adjust sweetness if needed by adding more syrup.
  8. Garnish (optional): Rim the glass with crushed sugar cookies, top with whipped cream, and sprinkle with crushed cookies or sprinkles.

Notes

Don’t boil the syrup; gentle heat is enough. Almond extract is potent—measure carefully. Make the syrup ahead of time for easy hosting. Chill almond milk and coffee before assembling to prevent ice from melting too quickly. For a pitcher, multiply ingredients by 4 and combine cooled syrup, almond milk, and coffee; refrigerate and serve over ice.
