  • 8 oz brie cheese (double or triple cream)
  • 6 oz aged sharp cheddar cheese
  • 4 oz blue cheese (Roquefort or Gorgonzola dolce)
  • 4 oz prosciutto, thinly sliced
  • 4 oz Genoa salami
  • 68 fresh figs (black mission or brown turkey), halved
  • 4 oz dried figs
  • 1 cup red grapes, small clusters
  • 1/2 cup candied pecans
  • 1/2 cup Marcona almonds
  • 1/4 cup fig jam or preserves
  • 3 tbsp honey (local raw honey preferred)
  • 1 small crusty baguette, sliced and toasted
  • 1 cup water crackers
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Place a large wooden cutting board or slate board on the counter. Ensure it is clean and dry.
  2. Position the brie wheel on the left side of the board. Slice the aged cheddar into thin triangles and fan them out in the center. Crumble the blue cheese into a small pile on the right side. Keep cheeses spaced apart.
  3. Place one small ramekin near the brie for the fig jam, and another near the blue cheese for the honey.
  4. Fold the prosciutto slices into loose ribbons and place them between the brie and cheddar. Roll the salami slices into small cylinders and tuck them near the blue cheese.
  5. Arrange the halved fresh figs cut-side up in a cluster near the brie. Scatter the dried figs around the cheddar. Place small grape clusters in any empty spaces.
  6. Sprinkle the candied pecans near the brie and the Marcona almonds near the blue cheese. Distribute nuts so every section has some crunch nearby.
  7. Fan the baguette slices along the top edge of the board. Place the water crackers in a neat stack near the cheddar. Keep them separate from wet ingredients.
  8. Drizzle a little honey over the brie and fresh figs. Sprinkle fresh rosemary sprigs around the board for garnish.
  9. Step back and check for empty spots. Fill with extra grapes or nuts if needed. Ensure everything is accessible.

Notes

Let cheeses sit at room temperature for 20-30 minutes before serving for best flavor and texture. Keep crackers and bread separate from wet ingredients to prevent sogginess. For a dairy-free version, use cashew cheese rounds and omit brie. If fresh figs are not in season, substitute with sliced pears or apples.
