Ingredients

  • Cheeses: sharp cheddar, smoked gouda, and creamy brie
  • Olives: mixed kalamata and green olives, pitted
  • Fresh veggies: baby carrots, celery sticks, cucumber slices
  • Roasted nuts: almonds and pecans, lightly salted
  • Black Bean “Witches’ Brew” Dip: 1 can (15 oz) black beans, 1 clove garlic, 1 tsp cumin, 1 tbsp lime juice, ½ tsp chipotle powder, salt to taste
  • Bloody Red Beet Hummus: 2 medium roasted beets, 1 can (15 oz) chickpeas, 2 tbsp tahini, 2 tbsp lemon juice, 1 garlic clove, salt to taste
  • Pumpkin Spice Cream Cheese Dip: 8 oz softened cream cheese, ½ cup pumpkin puree, 1 tsp cinnamon, ¼ tsp nutmeg, 2 tbsp maple syrup
  • Green Guacamole Graveyard: 3 ripe avocados, ¼ cup chopped red onion, 2 tbsp chopped cilantro, 1 minced jalapeño (optional), 2 tbsp lime juice, salt to taste
  • Spooky Salsa Verde: 5 roasted tomatillos, 2 roasted jalapeños, 1 garlic clove, ¼ cup fresh cilantro, 1 tbsp apple cider vinegar, salt to taste

Instructions

  1. Prepare the Black Bean “Witches’ Brew” Dip: Drain and rinse black beans. In a food processor, combine beans, garlic, cumin, lime juice, chipotle powder, and salt. Blend until smooth but slightly chunky. Refrigerate.
  2. Make the Bloody Red Beet Hummus: Roast beets at 400°F for about 45 minutes. Peel and chop once cooled. Blend beets, chickpeas, tahini, lemon juice, garlic, and salt until creamy. Add water if needed. Chill.
  3. Whip up Pumpkin Spice Cream Cheese Dip: Mix softened cream cheese with pumpkin puree, cinnamon, nutmeg, and maple syrup until smooth. Refrigerate.
  4. Prepare Green Guacamole Graveyard: Mash avocados with red onion, cilantro, jalapeño, lime juice, and salt. Cover with plastic wrap pressed to surface to avoid browning.
  5. Make Spooky Salsa Verde: Roast tomatillos and jalapeños under broiler until charred. Blend with garlic, cilantro, apple cider vinegar, and salt. Chill.
  6. Arrange the board: Lay out assorted crackers, sliced meats, and cheeses in clusters. Add fresh veggies and nuts around. Spoon dips into small bowls and place evenly across the board. Garnish with fresh herbs or edible Halloween decorations.

Notes

Prepare dips a few hours ahead to let flavors meld but avoid overnight storage to maintain texture. Keep guacamole covered with plastic wrap pressed to surface to prevent browning.
