  • ยฝ cup granulated sugar
  • ยผ cup light brown sugar, packed

  • 1 teaspoon vanilla extract
  • ยฝ cup whole milk, room temperature (or unsweetened almond milk for dairy-free)
  • 1 tablespoon turbinado or demerara sugar (for topping, optional)
  • Thin apple slices arranged on top (for decoration, optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease a 9-inch round cake pan with butter or non-stick spray, then line the bottom with a circle of parchment paper.
  2. In a medium bowl, toss the diced apples with 3 tablespoons of honey and 1 tablespoon of lemon juice. Let them sit while you prepare the rest of the batterโ€”at least 10 minutes. Give them a stir halfway through.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and black pepper.
  4. In a separate medium bowl, whisk together the olive oil, ยฝ cup honey, granulated sugar, and brown sugar until smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract and milk until everything is fully combined.

  8. Place the pan on the middle rack of your preheated oven and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly after 30 minutes, tent loosely with aluminum foil.
  9. Let the cake cool in the pan on a wire rack for 15 minutes. Then run a knife around the edges, invert onto the rack, and carefully remove the parchment paper. Let it cool completelyโ€”at least 1 hourโ€”before slicing.
