Perfect Iced Pumpkin Cream Cold Brew

This homemade pumpkin cream cold brew is a budget-friendly copycat of the Starbucks favorite, featuring a fluffy pumpkin-spiced cream topping over smooth cold brew coffee. It’s easy to make with simple ingredients and perfect for fall mornings.

  • 1/2 cup (120 ml) cold heavy cream
  • 2 tablespoons (30 ml) pumpkin puree (100% pure, not pie filling)
  • 1 tablespoon (15 ml) maple syrup
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1/2 teaspoon (2.5 ml) pumpkin pie spice
  • Pinch of salt
  • 1 cup (240 ml) unsweetened cold brew coffee
  • Ice (generous handful)
  • 2 tablespoons (30 ml) milk of choice (optional)

Instructions

  1. In a small mixing bowl, combine 1/2 cup cold heavy cream, 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, 1/2 teaspoon pumpkin pie spice, and a pinch of salt. Stir gently to break up the pumpkin puree.
  2. Using a handheld milk frother, whip the mixture on low speed for about 30 seconds until it starts to thicken. Increase to medium speed and whip for another 30 to 45 seconds until soft peaks form (the cream should hold its shape but still be pourable).
  3. Chill the cream in the fridge for 5 to 10 minutes while you prepare the cold brew.
  4. Fill a tall glass about 3/4 full with ice. Pour 1 cup of cold brew coffee over the ice. If using, add 2 tablespoons of milk and stir gently.
  5. Spoon the chilled pumpkin cream on top of the cold brew, starting with a spoonful in the center and adding more around the edges.
  6. Sprinkle a tiny pinch of pumpkin pie spice on top. Insert a straw and serve immediately.

Notes

For best results, use cold heavy cream and do not over-whip (stop when soft peaks form). The cream will sink into the cold brew over time, so enjoy within 15-20 minutes. For a dairy-free version, substitute full-fat coconut cream. The pumpkin cream can be stored in an airtight container in the fridge for up to 3 days; re-whip before using.
