This simple, forgiving banana bread recipe uses one bowl and basic pantry ingredients to create a moist, tender loaf with crunchy walnuts. It’s perfect for using up overripe bananas and is a guaranteed hit at bake sales or family gatherings.

  • 3 large very ripe bananas, mashed (about 1 ½ cups or 340g)
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup (60g) walnuts, chopped and toasted

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper, leaving overhang on the long sides.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth (a few lumps are fine).
  3. Add melted butter to the mashed bananas and stir until combined. Add sugar, egg, and vanilla extract; whisk until smooth and glossy, about 1 minute.
  4. Add flour, baking soda, salt, and cinnamon on top of the wet mixture. Lightly mix the dry ingredients together with a fork on top of the batter, then gently fold everything together until just combined. Do not overmix.
  5. Gently fold in the chopped walnuts, reserving a handful for topping if desired.
  6. Pour batter into prepared loaf pan and spread evenly. Sprinkle reserved walnuts on top if using.
  7. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  8. Cool in the pan on a wire rack for 15 minutes, then lift out using parchment and cool completely on the rack before slicing.

Notes

Use very ripe bananas with brown spots for best sweetness and moisture. Do not overmix the batter to avoid tough bread. Toast walnuts before adding for enhanced flavor. Let bread cool completely before slicing to prevent crumbling. Store at room temperature for up to 4 days; freeze for up to 3 months.
