Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 can (15 ounces, about 425g) pumpkin purée
  • 2 large eggs, at room temperature
  • ½ cup (120ml) vegetable oil
  • ¼ cup (60ml) milk
  • 1 teaspoon vanilla extract
  • ½ cup (60g) all-purpose flour (for streusel)
  • ¼ cup (50g) light brown sugar, packed (for streusel)
  • 2 tablespoons (25g) granulated sugar (for streusel)
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon ground nutmeg (for streusel)
  • 4 tablespoons (56g) unsalted butter, cold and cubed (for streusel)
  • ¼ cup chopped pecans or walnuts (optional, for streusel)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups.
  2. Make the streusel: In a small bowl, whisk together ½ cup flour, ¼ cup brown sugar, 2 tablespoons granulated sugar, 1 teaspoon cinnamon, and ¼ teaspoon nutmeg. Add cold butter cubes. Using a pastry cutter or fingers, cut butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces. Stir in nuts if using. Refrigerate while making batter.
  3. In a large mixing bowl, whisk together 2 cups flour, 1 cup granulated sugar, ½ cup brown sugar, pumpkin pie spice, baking soda, baking powder, and salt until no lumps remain.
  4. Make a well in the center of the dry ingredients. Add pumpkin purée, eggs, oil, milk, and vanilla extract. Do not stir yet.
  5. Whisk from the center, gradually incorporating dry ingredients into wet, until just combined and no streaks of flour remain. A few small lumps are fine. Do not overmix.
  6. Divide batter evenly among the 12 muffin cups, filling each about ⅔ to ¾ full.
  7. Remove streusel from fridge. Sprinkle generously over each muffin, pressing down gently so it sticks.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs. Tops should be golden brown and streusel crispy.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Room temperature ingredients matter for proper emulsification. Do not overmix the batter to avoid tough muffins. Chill the streusel to keep butter cold for crunchy clusters. Check baking powder and soda freshness before starting. Let muffins cool in pan exactly 5 minutes to prevent sogginess. Muffins taste even better the next day as flavors meld.
