  • 3 cups boiling water
  • 3 cups cold water
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Edible seashells and coral candies (optional)
  • Blue and green food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, mix cake mix, eggs, oil, water, and 1 tsp vanilla extract according to package instructions. Beat until smooth, about 2-3 minutes.
  3. Divide batter evenly between pans. Bake 25-30 minutes or until toothpick inserted in center comes out clean.
  4. Let cakes cool in pans for 10 minutes, then transfer to cooling rack to cool completely.
  5. Dissolve each jello packet in 1 cup boiling water. Stir until dissolved, then add 1 cup cold water to each. Let cool at room temperature until thick but not set, about 20-25 minutes.
  6. Place one cake layer on serving plate. Slowly spoon or pour one jello flavor over cake layer, spreading gently if needed. Refrigerate 20 minutes until jello firms slightly.
  7. Repeat layering with remaining cake and jello layers, alternating jello flavors for ocean gradient effect. Chill assembled cake at least 1 hour before frosting.
  8. In a chilled bowl, beat heavy cream, powdered sugar, and 1 tsp vanilla extract until stiff peaks form. Add blue or green food coloring if desired.
  9. Spread whipped cream frosting evenly over top and sides of cake.
  10. Decorate with edible seashells, coral candies, or edible glitter.

Notes

Pour jello layers when thick but not fully set to avoid mixing with cake layers. Chill bowl and beaters before whipping cream for best results. Use a sharp knife dipped in hot water for clean cake slices. Cake is best served chilled and stored in refrigerator up to 3 days. For gluten-free or dairy-free versions, swap cake mix and frosting accordingly.
