Ingredients

  • Unsalted butter, 3 tablespoons, divided
  • Fresh garlic, 2 cloves minced
  • Fresh lemon juice, from 1 large lemon (about 3 tablespoons)
  • Chicken broth, 1/2 cup (preferably low sodium)
  • Capers, 2 tablespoons, drained
  • Fresh parsley, chopped, about 2 tablespoons (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Slice horizontally if needed or pound gently to about 1/2-inch thickness. Season both sides generously with salt and freshly ground pepper.
  2. Place the flour in a shallow dish. Lightly coat each chicken piece in flour, shaking off excess.
  3. Add 2 tablespoons olive oil and 1 tablespoon butter to a large skillet over medium-high heat. Wait until the butter foams and the oil shimmers.
  4. Place the chicken in the pan in a single layer. Cook about 3 minutes per side until golden brown and cooked through. Transfer to a warm plate and tent with foil to rest.
  5. Lower heat to medium. Add minced garlic to the pan and cook about 30 seconds until fragrant but not browned.
  6. Pour in chicken broth and fresh lemon juice, scraping up browned bits. Simmer gently for 2-3 minutes to reduce slightly.
  7. Stir in capers and remaining 2 tablespoons butter, whisking until sauce is glossy and slightly thickened.
  8. Return chicken to the pan, spoon sauce over each piece, and warm through for 1-2 minutes. Sprinkle with chopped fresh parsley before serving.
