  • 1 teaspoon smoked paprika

  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped (optional)

  • 1 bunch fresh asparagus (about 1 lb), trimmed
  • 1 teaspoon olive oil (for asparagus)

Instructions

  1. Pat the sirloin cubes dry with paper towels to remove excess moisture.
  2. In a bowl, toss the steak with olive oil, kosher salt, black pepper, and smoked paprika until evenly coated. Let sit for 5 minutes.
  3. Snap off the woody ends of the asparagus by bending each stalk near the base until it naturally breaks.
  4. Toss the asparagus in olive oil, salt, and pepper. Set aside.
  5. In a small bowl, combine softened butter, minced garlic, parsley, salt, and pepper. Stir until well mixed. Optionally, warm for 15 seconds in the microwave for easier drizzling.
  6. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  7. Spread the steak cubes in a single layer in the air fryer basket. Cook for 6-7 minutes, shaking or flipping halfway through, aiming for medium-rare to medium doneness.
  8. Remove steak bites and set aside loosely covered with foil.
  9. Place asparagus in the air fryer basket and cook for 6-8 minutes at 400°F (200°C), shaking once, until tender but still crisp.
  10. Return steak bites to the basket with asparagus for a quick 1-minute warm-up if needed.
  11. Plate the steak bites and asparagus, then drizzle generously with the garlic butter. Serve immediately.

Notes

Avoid overcrowding the air fryer basket to ensure steak crisps properly. Pat steak dry before seasoning for better crust. Garlic butter can be made ahead and stored in the fridge; bring to room temperature before serving. If steak bites are undercooked, air fry an additional 1-2 minutes. For dairy-free option, substitute butter with vegan margarine or coconut oil. Asparagus can be swapped with green beans or broccolini.
