Quick Creamy Everything Bagel Avocado Toast with Poached Egg

A quick and satisfying breakfast recipe featuring toasted everything bagel halves topped with creamy mashed avocado and a perfectly poached egg, finished with everything bagel seasoning for extra flavor.

  • 1 large everything bagel, halved and toasted
  • 1 ripe avocado, peeled and pitted
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon sea salt
  • Freshly cracked black pepper, to taste
  • 1 teaspoon everything bagel seasoning (optional)
  • 1 large egg, fresh and preferably organic
  • 1 teaspoon white vinegar (optional for poaching)

Instructions

  1. Slice the everything bagel in half horizontally. Toast each half in your toaster or toaster oven until golden brown and crisp, about 2-3 minutes.
  2. In a small bowl, scoop out the avocado flesh. Add the fresh lemon juice and sea salt. Mash with a fork until creamy but still a bit chunky for texture. Taste and adjust salt if needed. Set aside.
  3. Bring about 2-3 inches of water to a gentle simmer in a small saucepan. Add the white vinegar (optional). Using a spoon, stir the water to create a gentle whirlpool, then carefully crack the egg into the center. Let it cook for about 3-4 minutes for a runny yolk or longer if you prefer firmer. Avoid boiling; keep a gentle simmer.
  4. Use a slotted spoon to lift the poached egg out of the water. Gently pat it dry on a paper towel to remove excess water.
  5. Spread the creamy avocado evenly over the toasted everything bagel halves. Place the poached egg on top of each slice carefully.
  6. Sprinkle freshly cracked black pepper and a pinch of everything bagel seasoning over the top. Serve immediately while warm.

Notes

Use the freshest eggs for best poaching results. Toast the bagel until crisp to prevent sogginess. Lemon juice in the avocado mash prevents browning and adds brightness. If you don’t have a slotted spoon, use a small spider strainer or a fork carefully. For vegan or gluten-free options, substitute the egg and bagel accordingly.
