  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • ½ cup mayonnaise
  • ¼ cup buttermilk or regular milk
  • 1 teaspoon chipotle chili powder or 1 tablespoon chipotle sauce in adobo
  • 1 teaspoon fresh lime juice
  • 1 teaspoon dried parsley or fresh parsley
  • Salt and black pepper to taste
  • 1 head iceberg or butter lettuce, leaves separated
  • Optional toppings: diced tomatoes, shredded cheddar cheese, sliced avocado, chopped cilantro, lime wedges

Instructions

  1. Gently separate the leaves from the head of lettuce, rinse under cold water, and pat dry. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground turkey to the skillet, breaking it apart with a spatula. Cook for 6-8 minutes until no longer pink, stirring occasionally.
  5. Sprinkle chili powder, cumin, smoked paprika, dried oregano, salt, and pepper over the turkey. Stir well and let spices toast for 1-2 minutes. Adjust seasoning to taste.
  6. In a small bowl, whisk together mayonnaise, buttermilk, chipotle chili powder or sauce, lime juice, parsley, salt, and pepper. Adjust thickness with more milk if needed.
  7. Spoon turkey mixture into each lettuce leaf. Drizzle with chipotle ranch dressing and add optional toppings as desired. Serve immediately.

Notes

Do not overcrowd the pan when browning the turkey to get a better sear. The chipotle ranch can be made a day ahead and stored in the fridge. Assemble lettuce cups just before serving to keep them crisp. Adjust chipotle sauce amount to control spice level. Substitute Greek yogurt for mayonnaise or dairy-free milk for buttermilk for dietary preferences.
