Ingredients

Scale
  • 4 salmon fillets (6 oz / 170 g each), skin on or off depending on preference
  • 3 tablespoons honey (raw or wildflower preferred)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce or tamari (low sodium if preferred)
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil or avocado oil
  • Freshly cracked black pepper, to taste
  • Optional: pinch of red pepper flakes
  • 1 pound baby bok choy, halved lengthwise (or regular bok choy chopped)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon toasted sesame seeds
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  1. In a small bowl, whisk together 3 tablespoons honey, 3 minced garlic cloves, 2 tablespoons soy sauce, and 1 tablespoon rice vinegar. Set aside.
  2. Rinse and halve the baby bok choy lengthwise. Mince 1 garlic clove.
  3. Heat 1 tablespoon olive oil in a non-stick or cast iron skillet over medium-high heat.
  4. Pat salmon dry with paper towels and season with freshly cracked black pepper.
  5. Place salmon fillets skin-side down (if skin on) and cook for 4-5 minutes without moving until golden and crisp.
  6. Flip salmon and cook for another 2-3 minutes.
  7. Pour the honey garlic glaze over the salmon in the pan, spooning gently to coat. Cook for 1-2 minutes more until glaze thickens slightly, watching closely to avoid burning.
  8. Remove salmon from pan and keep warm.
  9. In a separate large sautรฉ pan or wok, heat 1 tablespoon toasted sesame oil over medium heat.
  10. Add minced garlic and sautรฉ for 30 seconds until fragrant.
  11. Add halved bok choy, soy sauce, and a pinch of salt and pepper.
  12. Stir-fry for 3-4 minutes until bok choy leaves are wilted but stems remain crisp.
  13. Sprinkle toasted sesame seeds over the bok choy just before serving.
  14. Plate the glazed salmon with a generous serving of sesame bok choy on the side. Drizzle any remaining glaze from the pan over the salmon.

Notes

Pat salmon dry before searing to get a good crust. Cook glaze on medium heat to avoid burning honey. Flip salmon only once. Do not overcook bok choy to maintain crunch. Multitask by prepping bok choy while salmon cooks. For gluten-free, use tamari. For vegan, substitute salmon with tofu or tempeh and adjust cooking time.
