  • 8 oz egg noodles
  • 4 garlic cloves, minced
  • 3 tbsp honey
  • 1/4 cup soy sauce (low-sodium preferred)

  • 34 scallions, sliced thin (white and green parts separated)
  • 1 tsp grated ginger (optional)
  • 1 tbsp vegetable oil
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 oz egg noodles and cook according to package instructions (6 to 8 minutes) until al dente. Drain noodles and toss with a little sesame oil to prevent sticking. Set aside. Reserve 1/2 cup pasta water for later if needed.
  2. While noodles cook, mince 4 garlic cloves and grate 1 tsp fresh ginger. Slice 3-4 scallions thinly, separating white and green parts.
  3. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add 1 lb ground beef, breaking it up with a spatula. Season lightly with salt and pepper. Cook until browned and cooked through, about 6-8 minutes. Drain excess fat if desired.
  4. Push beef to one side of the pan. Add minced garlic, grated ginger, and the white parts of the scallions. Cook for 1-2 minutes until fragrant but not burnt.
  5. Stir in 3 tbsp honey, 1/4 cup soy sauce, 2 tbsp toasted sesame oil, and 1/4 tsp red pepper flakes (if using). Mix well and let the sauce bubble gently for 2-3 minutes to thicken slightly.
  6. Add the cooked noodles to the skillet. Toss everything together to coat the noodles in the sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  7. Remove from heat. Sprinkle the green parts of the scallions over the top for freshness and crunch. Toss once more and serve immediately.

Watch garlic carefully during sautéing to avoid burning. Reserve pasta water to loosen sauce if needed. Toast sesame oil briefly to enhance nutty aroma.
