Instructions

  1. Prepare the zucchini noodles using a spiralizer or julienne peeler. Place them in a colander, sprinkle with a pinch of salt, and let sit for 10 minutes to release excess moisture. Gently squeeze the noodles with paper towels to dry.
  2. Pat the shrimp dry with paper towels. Season with salt, pepper, and red pepper flakes if using.
  3. Heat 2 tablespoons of butter in a large non-stick skillet over medium-high heat. Add shrimp in a single layer and cook about 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Lower heat to medium and add remaining 1 tablespoon butter. Add minced garlic and sauté for about 30 seconds until fragrant. Stir in lemon juice and zest, scraping browned bits from the pan. Let sauce simmer gently for 1-2 minutes.
  5. In a separate pan, heat olive oil over medium heat. Add zucchini noodles and sauté for 2-3 minutes until slightly tender but still crisp. Avoid overcooking.
  6. Add shrimp back to the lemon butter sauce and toss to coat. Fold in zucchini noodles and mix gently. Heat through for 1-2 minutes.
