Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs total)
  • 4 tablespoons unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cloves garlic, thinly sliced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C). Position a rack in the middle of the oven.
  2. Make the garlic butter: In a small bowl, combine 4 tablespoons melted butter, 6 minced garlic cloves, 1 tablespoon olive oil, 1 teaspoon paprika, ½ teaspoon dried thyme, ½ teaspoon salt, and ¼ teaspoon pepper. Stir together.
  3. Prep the chicken: Pat the chicken thighs dry with paper towels. Place them on your baking sheet. Using your hands (or a brush), rub the garlic butter mixture all over the chicken, making sure to get some under the skin too.
  4. Toss the green beans: In a separate bowl, toss the trimmed green beans with 2 tablespoons olive oil, ½ teaspoon salt, ¼ teaspoon pepper, and the thinly sliced garlic. Spread them around the chicken thighs on the same pan.
  5. Roast for 25-30 minutes. After 15 minutes, use tongs to flip the chicken thighs and give the green beans a quick stir. The chicken is done when the skin is golden brown and crispy, and the internal temperature reaches 165°F (74°C). The green beans should be tender-crisp with some nice browned spots.
  6. Make the finishing sauce: While the chicken rests (about 5 minutes), melt 2 tablespoons butter in a small skillet or microwave-safe bowl. Add 2 minced garlic cloves and cook for about 30 seconds until fragrant. Stir in the lemon juice and fresh parsley.
  7. Finish and serve: Drizzle the garlic butter sauce over the chicken and green beans. Give everything a gentle toss to coat.

Notes

Don’t skip drying the chicken for crispy skin. Get the butter under the skin for maximum flavor. Watch your green beans—if they’re thin, they may cook faster than the chicken. Let the chicken rest for 5 minutes before serving. Line your pan with foil for easy cleanup.
