  • 4 cups fresh broccoli florets, washed and trimmed
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar or honey
  • 1 teaspoon toasted sesame oil
  • 1/2 cup beef or chicken broth
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons vegetable or canola oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Thinly slice 1 pound of flank steak against the grain into strips about 1/4 inch thick. Wash and trim 4 cups of broccoli florets. Pat beef dry with paper towels. (5 minutes)
  2. In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 2 tablespoons oyster sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, 1 teaspoon toasted sesame oil, and 1/2 cup beef broth. Set aside. (3 minutes)
  3. Combine 1 tablespoon cornstarch with 2 tablespoons water in a small cup and stir until smooth. Set aside. (1 minute)
  4. Heat 2 tablespoons vegetable oil in a large wok or skillet over medium-high heat until shimmering but not smoking. (2 minutes)
  5. Add half the beef in a single layer. Cook for about 1-2 minutes, stirring occasionally, until browned but not fully cooked. Remove and set aside. Repeat with remaining beef. (5 minutes)
  6. In the same pan, add garlic and ginger and stir-fry for about 30 seconds until fragrant. (1 minute)
  7. Add broccoli florets and stir-fry for 3-4 minutes until bright green and just tender but still crisp. Add a splash of water if needed. (4 minutes)
  8. Return beef to the pan, pour in the sauce, and stir to coat. Bring to a simmer. Add the cornstarch slurry and stir gently until the sauce thickens and coats the beef and broccoli evenly, about 1-2 minutes. (3 minutes)
  9. Taste and adjust seasoning with salt or extra soy sauce if needed. Remove from heat. (1 minute)
  10. Serve immediately over steamed rice or noodles. Optional garnish with toasted sesame seeds or sliced green onions. (2 minutes)

Notes

Slice beef thinly against the grain for tenderness. Do not overcrowd the pan to ensure proper searing. Use cornstarch slurry to thicken the sauce. Avoid overcooking broccoli to keep it crisp. For gluten-free, substitute tamari for soy sauce and check oyster sauce labels or use alternatives.
