  • 1 pound (450g) ground beef (80/20 blend)
  • 3 cups (300g) broccoli florets, fresh or thawed frozen
  • 3 cloves garlic, minced (or garlic powder as substitute)
  • 1/4 cup (60ml) soy sauce (low-sodium preferred)
  • 2 tablespoons (30ml) oyster sauce (optional)
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil (can substitute canola or avocado oil)
  • Ground black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced for garnish
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (cornstarch slurry)

Instructions

  1. Rinse and chop broccoli into bite-sized florets (about 3 cups). Mince the garlic cloves finely. Slice green onions for garnish. Set aside the cornstarch slurry (1 teaspoon cornstarch mixed with 2 tablespoons cold water).
  2. Place a large skillet or wok over medium-high heat and add 2 tablespoons vegetable oil. Heat until shimmering.
  3. Add 1 pound ground beef, breaking it apart with a spoon. Cook for 5-7 minutes, stirring frequently, until browned and cooked through. Drain excess fat, leaving about 1 tablespoon for flavor.
  4. Add minced garlic and broccoli florets. Stir and cook for 4-5 minutes until broccoli is bright green and tender-crisp.
  5. In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, sesame oil, and optional red pepper flakes. Pour over beef and broccoli.
  6. Stir well to coat ingredients with sauce. Pour in cornstarch slurry and stir continuously for 1-2 minutes until sauce thickens and becomes glossy.
  7. Taste and adjust seasoning with black pepper or more soy sauce if needed. Remove from heat and sprinkle sliced green onions on top.
  8. Serve immediately over steamed rice or noodles.

Notes

If broccoli isn’t cooking fast enough, add a splash of water and cover briefly to steam, then remove lid to avoid sogginess. Use low-sodium soy sauce to control saltiness. Cornstarch slurry is key for a glossy sauce. For gluten-free, substitute soy sauce with tamari or coconut aminos and omit oyster sauce or use gluten-free version.
