  • ⅓ cup (80ml) low-sodium soy sauce
  • 2 tablespoons (30ml) honey
  • 2 cloves fresh garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) toasted sesame oil
  • 1 tablespoon (8g) cornstarch mixed with 2 tablespoons cold water
  • Vegetables of choice (steamed broccoli, snap peas, shredded carrots, bell peppers)
  • 2 cups (370g) cooked white or brown rice
  • Optional garnishes: sesame seeds, sliced green onions, sriracha

Instructions

  1. Cook 2 cups (370g) of your preferred rice according to package instructions.
  2. In a small bowl, combine ⅓ cup (80ml) low-sodium soy sauce, 2 tablespoons (30ml) honey, 1 tablespoon (15ml) rice vinegar, minced garlic, grated ginger, and 1 teaspoon (5ml) toasted sesame oil. Stir until honey dissolves and set aside.
  3. Cut 1 lb (450g) chicken thighs or breasts into bite-sized pieces and toss lightly with salt and pepper.
  4. Heat a large skillet over medium-high heat with a splash of oil. Add chicken pieces in a single layer and cook undisturbed for about 3 minutes until golden on one side, then stir and cook another 3 minutes until mostly cooked through.
  5. Pour the prepared sauce over the chicken and stir to coat evenly.
  6. Mix 1 tablespoon (8g) cornstarch with 2 tablespoons cold water to make a slurry. Pour into the skillet and stir continuously as the sauce thickens to a glossy glaze, about 2 minutes.
  7. Quickly steam or sauté your chosen vegetables until tender-crisp, about 3-5 minutes.
  8. Assemble bowls by spooning cooked rice into bowls, layering teriyaki chicken on top, and adding vegetables alongside. Garnish with sesame seeds and sliced green onions if desired.

Notes

Use tamari instead of soy sauce for gluten-free version. Reduce honey or substitute with maple syrup for lower sugar. Avoid overcrowding the pan to ensure proper searing. Add cornstarch slurry slowly to avoid lumps and adjust thickness with water if needed. Fresh ginger and garlic enhance flavor significantly.
