  • 2 cups cooked chicken, shredded or chopped
  • 1 cup shelled edamame (frozen, thawed)
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • 3 tablespoons soy sauce (low-sodium recommended)
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon freshly grated ginger
  • 2 garlic cloves, minced
  • 1 teaspoon chili flakes or Sriracha (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 oz (225 g) rice noodles and cook according to package instructions, usually 4-6 minutes until tender but still slightly firm. Drain and rinse under cold water to stop cooking. Set aside.
  2. While noodles are cooking, heat a small dry skillet over medium heat. Add 1 tablespoon sesame seeds and toast for 2 minutes, stirring frequently to prevent burning. Remove from heat and set aside.
  3. In a small bowl or jar, whisk together 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon toasted sesame oil, 1 tablespoon honey, 1 tablespoon grated ginger, 2 minced garlic cloves, and chili flakes if using. Taste and adjust sweetness or acidity to your liking.
  4. If using leftover or cooked chicken, chop or shred it into bite-sized pieces. Briefly warm it in a pan or microwave. Similarly, thaw edamame by running under warm water or microwaving for 1 minute.
  5. Place the drained noodles in a large mixing bowl. Add warm chicken, edamame, and sliced green onions. Pour the sesame ginger sauce over everything and toss gently to combine, ensuring noodles are evenly coated.
  6. Sprinkle the toasted sesame seeds on top for crunch and a burst of flavor. If you like, add extra chili flakes or a squeeze of lime for brightness. Serve immediately while warm.

Notes

Do not overcook noodles; rinse immediately with cold water to stop cooking. Toast sesame seeds for added crunch and aroma. Adjust sauce sweetness and acidity to taste. If noodles seem dry, add a splash of warm water or sesame oil. Toss gently to avoid breaking noodles.
