  • 1 cup (240 ml) classic hummus (store-bought or homemade)
  • 1 cup (150 g) ripe watermelon cubes
  • 1 cup (150 g) fresh blueberries
  • 1 cup (150 g) sliced strawberries
  • 1 cup (120 g) pita chips (store-bought or homemade)
  • Handful of fresh mint leaves for garnish
  • Lemon wedges (optional, for squeezing)

Instructions

  1. Wash all fresh fruit thoroughly. Cut the watermelon into 1-inch bite-sized cubes. Hull and slice the strawberries into thin slices, and keep the blueberries whole. Set aside on a plate or small bowl to drain any excess juice.
  2. Optional: Preheat oven to 375°F (190°C). Cut pita bread into triangles and toss with a drizzle of olive oil and a pinch of sea salt. Spread on a baking sheet in a single layer. Toast for 8-10 minutes or until golden and crisp. Let cool before adding to the board.
  3. Place the hummus in a small bowl and set it on your serving board. Arrange the watermelon cubes, strawberries, and blueberries around the bowl in neat clusters or a casual scatter. Add pita chips in piles to fill in the gaps.
  4. Tuck fresh mint leaves between the fruit and chips for pops of green and refreshing aroma. Place lemon wedges on the side for squeezing over the hummus or fruit just before eating.
  5. Optional final touch: Drizzle a tiny bit of good-quality olive oil over the hummus and sprinkle with a pinch of smoked paprika or sumac.

Notes

Keep the snack board chilled until ready to serve to keep fruit fresh and hummus cool. Assemble just before serving to avoid sogginess. Toast pita chips evenly and watch closely to prevent burning. For gluten-free, replace pita chips with gluten-free crackers or crunchy veggie sticks.
