A quick and easy summer punch combining fresh strawberries, tart lemon juice, and sparkling water for a refreshing and crowd-pleasing drink.

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup freshly squeezed lemon juice (about 45 medium lemons)
  • 3/4 cup granulated sugar (adjust to taste)
  • 2 cups cold water
  • 4 cups chilled club soda or sparkling water
  • Ice cubes or frozen strawberries as ice cubes
  • A handful of fresh mint leaves for garnish

Instructions

  1. Make the Strawberry Puree (10 minutes): Place the sliced fresh strawberries into your blender. Blend until smooth and vibrant red. If you prefer a seed-free punch, strain the puree through a fine mesh sieve into a bowl, pressing with a spoon to extract all the juice.
  2. Prepare the Lemon Syrup (5 minutes): In a separate bowl or small saucepan, combine the granulated sugar with 1 cup of freshly squeezed lemon juice and 2 cups of cold water. Stir until the sugar dissolves completely. If you want a slightly thicker syrup, warm the mixture gently over low heat, then cool before use.
  3. Combine Ingredients (5 minutes): In a large pitcher or punch bowl, mix the strawberry puree with the lemon syrup. Stir well to integrate the flavors evenly.
  4. Add Fizz and Chill (5 minutes): Just before serving, pour in 4 cups of chilled club soda or sparkling water. Stir gently to preserve the bubbles. Add ice cubes or frozen strawberries to keep the punch cold without watering it down.
  5. Garnish and Serve: Add fresh mint leaves for an aromatic touch. You can also float thin lemon slices on top for extra visual appeal. Serve immediately with tall glasses and straws.

Notes

Use fresh lemon juice for best flavor; frozen strawberries can be used if fresh are not available but thaw before blending. Stir sparkling water gently to preserve fizz. Frozen strawberries can be used as ice cubes to avoid diluting the punch. Prepare puree and syrup up to 2 days ahead and refrigerate; add soda and ice just before serving.
