  • 1/4 cup honey (85 g)
  • 23 chipotle peppers in adobo, minced
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp apple cider vinegar
  • 1/2 cup chicken broth (120 ml)
  • 1 large ripe mango, peeled and julienned
  • 2 cups shredded red cabbage
  • 1 large shredded carrot
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp honey (for slaw)
  • Salt and pepper to taste
  • Soft corn or flour tortillas

Instructions

  1. Trim excess fat from the pork shoulder but leave some fat for moisture. Pat dry with paper towels.
  2. In a medium bowl, blend honey, minced chipotle peppers, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, apple cider vinegar, and chicken broth until smooth.
  3. Rub the chipotle honey sauce evenly all over the pork shoulder and place it in the slow cooker.
  4. Cook on low for 8-10 hours or on high for 4-6 hours until pork is fork-tender and shreds easily.
  5. While pork cooks, combine mango, red cabbage, carrot, red onion, cilantro, lime juice, honey, salt, and pepper in a large bowl. Toss well and refrigerate.
  6. Remove pork from slow cooker and shred using two forks, discarding large chunks of fat. Return shredded pork to slow cooker and stir into juices.
  7. Warm tortillas on a dry skillet over medium heat for about 30 seconds per side or wrap in foil and heat in a 350°F oven for 10 minutes.
  8. Assemble tacos by spooning pulled pork onto warm tortillas and topping with mango slaw. Garnish with extra cilantro or lime wedges if desired.

Notes

Adjust chipotle peppers to control heat level. Resist lifting the slow cooker lid during cooking to maintain temperature. Shred pork while warm for best texture. Mango slaw can be made ahead and chilled to meld flavors. For milder flavor, reduce chipotle or substitute with smoked paprika. Leftover pork freezes well for up to 3 months.
