  • 1 medium red onion, thinly sliced
  • ½ cup apple cider vinegar (120 ml)
  • 1 tablespoon granulated sugar

  • 2 tablespoons butter (30 grams), melted
  • Optional: 1 teaspoon smoked paprika

Instructions

  1. Prepare the pickled red onion: Thinly slice one medium red onion. In a small saucepan, combine ½ cup apple cider vinegar, 1 tablespoon sugar, and a pinch of salt. Heat until sugar dissolves. Pour hot vinegar mixture over onion slices in a heatproof bowl or jar. Let sit for at least 30 minutes to develop flavor. Refrigerate if making ahead.
  2. Mix brisket filling: In a large bowl, combine 2 pounds shredded smoked brisket, 1½ cups shredded sharp cheddar, and 2-3 sliced jalapeños. Add freshly ground black pepper and optional smoked paprika. Mix gently but thoroughly. Adjust seasoning if needed.
  3. Prepare slider buns: Melt 2 tablespoons butter in a skillet over medium heat. Slice slider buns in half and toast cut sides in butter until golden and crispy, about 2 minutes per side. Watch closely to avoid burning.
  4. Assemble sliders: Spoon a generous amount of brisket mixture onto the bottom half of each toasted bun. Add a few slices of pickled red onion on top, then cover with the bun tops.
  5. Warm and melt cheese (optional): Place assembled sliders on a baking sheet and warm in a preheated oven at 350°F (175°C) for 5 minutes to melt cheese and heat through.
  6. Serve immediately: Enjoy sliders fresh and warm.

Notes
