These crispy cheesy garlic zucchini fritters come together in under 30 minutes using simple pantry staples. The dish towel method for draining zucchini ensures perfectly crispy edges and tender insides every time.

Ingredients

Scale
  • 2 medium zucchini (about 1 pound)
  • 1 teaspoon kosher salt (or ½ teaspoon table salt)
  • 1 large egg, lightly beaten
  • ½ cup all-purpose flour
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella or cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh dill or parsley (optional)
  • ¼ cup avocado oil or vegetable oil (for frying)

Instructions

  1. Grate the zucchini using the large holes of a box grater. Do not peel.
  2. Place grated zucchini in a colander, sprinkle with salt, toss, and let sit for 10 minutes.
  3. Transfer salted zucchini to a clean dish towel, gather corners, and squeeze tightly over the sink until no more liquid drips out.
  4. In a large bowl, combine squeezed zucchini, beaten egg, minced garlic, shredded cheese, Parmesan, black pepper, and optional herbs. Stir well.
  5. Add flour and mix gently until just incorporated. Do not overmix.
  6. Heat oil in a cast iron skillet or non-stick pan over medium heat for 2-3 minutes. Test with a tiny bit of batter; it should sizzle.
  7. Using a ¼ cup measure, scoop batter and drop into hot oil. Flatten gently to form patties about ½ inch thick. Cook in batches of 3-4, not overcrowding.
  8. Cook for 3-4 minutes on the first side until golden and crispy, then flip and cook 2-3 minutes more.
  9. Transfer cooked fritters to a paper towel-lined plate. Add more oil if needed and repeat with remaining batter.
  10. Serve immediately while hot and crispy.

Notes

Be aggressive when squeezing zucchini dry to avoid soggy fritters. Keep heat at medium to prevent burning. For best results, serve immediately. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a 350°F oven for 5-7 minutes.
