These light and flavorful baked brie puff pastry bites are perfect for when you want something that feels fancy but doesn’t require hours of effort. They deliver golden, flaky, melty goodness that makes everyone close their eyes after the first bite.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 oz brie cheese, rind removed and cut into small cubes
  • 2 tablespoons honey
  • 1/4 cup caramelized onions
  • 1 egg, beaten
  • 1 teaspoon fresh thyme leaves (optional)
  • Flaky sea salt, for finishing
  • 1 tablespoon butter (if making your own caramelized onions)
  • For the caramelized onions (if making from scratch):
  • 1 large yellow onion, thinly sliced
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Cut it into 12 equal squares, about 2 inches each.
  3. If using homemade caramelized onions: Heat 1 tablespoon of olive oil in a small skillet over medium-low heat. Add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes, until the onions are soft and golden brown.
  4. Place a small cube of brie (about 1/2 teaspoon) in the center of each pastry square. Top with a tiny spoonful of caramelized onions — about 1/4 teaspoon. Drizzle a few drops of honey over the top.
  5. Gently bring the four corners of each square together, pinching them at the top to form a little bundle. Place each bundle on the prepared baking sheet, spacing them about 1 inch apart.
  6. Brush the top of each pastry bundle with the beaten egg. Sprinkle a few fresh thyme leaves on top, then finish with a pinch of flaky sea salt.
  7. Bake for 12-15 minutes, until the pastry is puffed and deeply golden. The brie should be melted and bubbling slightly.
  8. Let them rest on the baking sheet for 2-3 minutes. Transfer to a serving platter and drizzle with a little extra honey if desired.

Notes

Keep everything cold for best flakiness. Do not skip the egg wash. Watch the brie size — aim for cubes about 1/2 inch. These are best served warm. Assemble ahead and refrigerate for up to 4 hours before baking. Freeze unbaked for up to 3 months.
