Instructions

  1. Prep the chicken: Pat chicken breasts dry with paper towels. Cut into nugget-sized pieces, about 1½ inches each. You’ll get about 20-24 nuggets.
  2. Marinate: In a medium bowl, whisk together buttermilk, salt, and pepper. Add chicken pieces and toss to coat. Let sit at least 10 minutes (up to 2 hours in fridge).
  3. Make the coating: In a shallow bowl, combine panko, Parmesan, garlic powder, paprika, onion powder, and cayenne (if using). Mix well.
  4. Set up breading station: Line up bowls: buttermilk mixture on left, coating in middle, clean baking sheet on right.
