This easy 3-ingredient pear preserve recipe uses ripe pears, sugar, and a touch of cinnamon and vanilla for a warm, complex flavor. Perfect for using up ripe pears, it requires no canning experience and is great for gifting or everyday use.

  • 2 pounds (900 grams) ripe but firm pears (Bartlett, Anjou, or Bosc), chopped into 1/2-inch cubes
  • 1 cup (200 grams) granulated sugar
  • 1 cinnamon stick (or 1 teaspoon ground cinnamon)
  • 1 vanilla bean (or 1 tablespoon pure vanilla extract)
  • 1 tablespoon (15 ml) lemon juice
  • Pinch of salt
  • 1/4 cup (60 ml) water (if needed)

Instructions

  1. Prep the pears: Wash, peel if desired, quarter, core, and chop into 1/2-inch cubes. Toss with lemon juice to prevent browning.
  2. Split the vanilla bean: Slice lengthwise, scrape out seeds, and reserve both seeds and pod. If using extract, measure and set aside.
  3. Combine everything in the pot: Add pears, sugar, vanilla seeds and pod (or extract), cinnamon stick, salt, and water. Stir and let sit for 10 minutes.
  4. Bring to a gentle boil over medium heat, stirring occasionally. Reduce heat to medium-low for a steady simmer.
  5. Simmer for 25-35 minutes, stirring every 5 minutes, until thickened and golden amber. Add water a tablespoon at a time if too thick.
  6. Test for doneness: Place a small plate in the freezer. Drop a spoonful of preserves on the cold plate; if it wrinkles when pushed, it’s done. If not, cook 5 more minutes and test again.
  7. Remove the cinnamon stick and vanilla bean pod. Rinse and dry the pod for vanilla sugar.
  8. Cool for 10-15 minutes, then ladle into clean jars, leaving 1/2 inch headspace. Wipe rims, seal, and cool completely before refrigerating.

Notes

Don’t rush the maceration step; let pears sit with sugar for 10 minutes. Use gentle heat to avoid scorching. The plate test is more reliable than a thermometer. Skim foam for clearer preserves. Use a pot with 2-3 inches headspace to prevent overflow. Preserves thicken as they cool.
